Gluten Free Banana & Coconut Bread
460g Bendy Bread Mix
2 tspns mixed spice
1 cup firmly packed brown sugar
1 cup shredded coconut
1 egg, lightly beaten
2 egg whites
300mls Premium Whey Blend, milk
or milk alternative
50g butter or butter
alternative (Nuttelex)
2 medium ripe bananas, mashed
Add to your mixing bowl flour,
mixed spice, brown sugar and coconut. Stir together and make a
well in the centre. Mix
together eggs, egg white, milk and butter. Pour wet mixture into the well in
the mixing bowl. Mix thoroughly then add mashed banana.
Spoon mixture into a prepared
loaf tin and bake for approximately 1 hour in a moderately slow oven (160oC)
until a skewer comes out clean when inserted into the centre. Serve warm or
cold with butter or vanilla yoghurt.
