Fruit and Hazelnut Muffins

Gluten Free Fruit and Hazelnut Muffins

300g of Brighterlife Muffin Mix
100g Hazelnut Meal (1 packet)
1/4 cup of caster sugar (optional)*
1 Egg or Egg replacer*
1/4 cup of sour cream
1 cup of frozen raspberries

200mls water

Method:

Place sugar and egg in a mixing bowl and mix well. Add in Brighterlife Muffin Mix, Hazelnut meal, additional sugar, sour cream and water. Mix until combined thoroughly.

Prepare a friands tin with cooking spray or line with a strip of baking paper to prevent sticking.
Pour in the batter equally between the twelve holes. Now grab a handful of raspberries or mixed berries
and push into your muffins. (See picture below)
Bake your muffins for 20 minutes in a moderately slow oven for approx 160oC.

Take out and leave to cool. ( As per picture below)

Serving suggestions:
I had my serve for lunch with Jalna vanilla yoghurt and fresh blueberries on top.
Alternatively if you would like them for a morning tea, my taste testers had them with whipped cream
and a final suggestion using 1 cup of Gluten free icing sugar and a tablespoon of Philly Cheese with a
dash of milk (or alternative) mix well together. Cut friands in half and fill the centre with icing and top with

the icing.
