Delicious Gluten Free Cup Cakes

Gluten Free Cup Cakes

Ingredients:

 

2cups Muffin Mix                           
2 eggs

80g Butter                                        
½ cup sugar (optional)
1 tspn vanilla essence                  
¾ cup milk or alternative


 

  • Method:
    Separate eggs and beat egg whites until they form soft peaks in a small bowl with an electric mixer at high speed.
    In another large bowl beat butter slowly adding in the sugar.  Beat until fluffy.
  • Beat in egg yolks and vanilla.  Add flour mixture, a third at a time, alternatively with the milk, beating just until blended.
  • Fold in the beaten egg whites.
  • Prepare medium sized Cup Cake Paper Holders into a 12 hole muffin tray, they will keep their shape better.

 

Bake in a moderately slow even 160oC for 15-20mins.
