Gluten Free Christmas Cake

Festive Fruit and Nut Cake

What you need to bake these cakes:
100g Muffin Mix
3 eggs
2 tblspns honey
1 tspn vanilla
2 tblspns rum
1 cup glace cherries (red/green)
500g mixed fruit
450g of mixed nuts


Method:
Beat eggs until thick and creamy. Then beat in honey, essence and rum.
Add into another bowl, mixed fruit (leave fruit chunky for the desired effect), nuts and flour. Mix well by hand.

Cut up the cherries and add to the above mixture. Pour liquid mixture over the nuts and fruit and mix in well by hand.

Prepare baking tin with some non-stick spray. Alternatively place a strip of baking paper in each compartment.
You can use large muffin trays or the rectangular bread roll tin tray which is my favourite.

Baking:
Bake in a slow oven approx 160oC for about 30minutes.

Once cooled you can then wrap in foil and tie a Xmas ribbon around and there you have the cutest gift. Enjoy!
