Cheesecake base - Pikelet/Pancake mix

Ingredients:
200g of the Gluten Free Vanilla Biscuits
1 1/2 teaspoons of ground cinnamon
100g unsalted butter, melted (use nuttlex)

Method:
Combine the gluten free vanilla biscuits and 1 teaspoon of cinnamon in a food processor and process until it resembles a fine bread crumb mixture.

Add the melted butter and process until the mixture is well combined. Press the biscuit mixture firmly over the base of a 24cm springform pan.

This recipe is extremely easy and the best part is you have delicious biscuits left over to munch on.
