
Gluten Free Muesli Bars

cup of puffed corn/psyllium flakes or oats -(Try New Old Fashioned Oats GF
from USA)
- 1
cup puffed millet/rice or rice bubbles
Method:
Add
all dry ingredients together and mix well.
In
a separate bowl add butter and melt in the microwave.
Add in honey
and egg white and mix well with a fork.
Add
to dry mixture.
The
dough mixture should be moist and sticky. Don't make it too
wet
and add water by the tablespoon if you think the mixture is
not
sticky enough.
Line
with baking paper a lamington size tray (approx 29cm x 19cm).
Bake
at 160c for approx 20 minutes or until brown.
Cut
the mixture into desired sizes while it is warm and leave in
the
tray until it is cool.
Placing
the tray in the fridge can help the mixture set and make it
easier
to lever slices out.
Place
in an airtight jar or freeze for a prepared quick healthy
snack.
