
Gluten Free Vege Muffins
Snack time gluten free vege muffins
�Ingredients:
1 1/2 cups of Bread or
breadroll mix
1 egg
1
cup of� leftover veges or grated zucchini & carrot
1
cup of cheese(optional)

cup of bacon
1
onion or leek
150mls
water
Sunflower
seeds & pumpkin seeds
Method: Cook bacon and onion in a
fry pan.� Add veges and cook for 5mins. Set aside to cool in a separate bowl.
Prepare sifted bread mix flour, add egg and all other ingredients and mix
well.� Pour into prepared muffin trays.
Sprinkle with sunflower seeds and
pumpkin seeds.

Cook
for 20-25mins in a moderately slow oven 160oC until lightly browned.
These freeze very well for a
healthy snack or lunch. Makes approximately 12 muffins
