Lunch Box Left Over Veggie
Bake
This is a great solution to
those left overs no one wants to eat and a deliciously easy lunch option.
Ingredients:
1 � cup Bread
or Bread Roll mix,
1
cup chopped or grated veggies (zucchini, carrot, celery, capsicum),
5
eggs,
1
cup grated cheese (optional),

cup chopped bacon,
1
onion or leek
Method:
Preheat
oven 160C.�
Prepare
a slab tray or ceramic lasagne dish.� Cook bacon and onion, add garlic
(optional).�
Add
chopped or grated veggies stirring for approx 5 mins or until tender.�
Transfer to a bowl allow to cool.�
Add
in whisked eggs, cheese & 2 tblspns of olive oil.� Add flour, salt, pepper and
stir until well combined.�
Pour
into the prepared pan.� Bake for 30 mins or until set and golden.��
