
Gluten Free Biscuits
Gluten Free Christmas Stars
Ingredients:
80g butter or alternative
100g caster sugar or xylitol
1 tspn vanilla
1 med egg
3 tblspns honey
300g Bread Mix or Bread Roll Mix
Method:
Cream the butter and the
sugar with vanilla until light and fluffy. Mix the eggs with the honey, beat
lightly.
Sift the flour in a separate
bowl. Now add the flour to the butter and sugar. Add in the egg mixture
slowly
stirring as you go. You are
looking for a consistency that is not too sticky. It will ball up into a
dough, if it is
too sticky just add some flour.
The dough will have a shiny surface and moist, so alternatively if the dough
will
not stick together to work with
it is too dry. Add a teaspoon of water at a time to give your dough more
moisture.
Preheat your oven to 160oC.
Using a piece of baking paper cut to the size of a baking tray, lightly
sprinkle some
flour. Take half your dough
and roll into a ball and flatten. Lightly sprinkle with flour and place
another sheet of baking
paper on top. Now you can roll
this mixture out as thin as you can, approx 3-5mm. You can now use a shape
cutter
to make your shapes, in this
case, stars. Continue with this until all the dough is used. Just remember to
sprinkle flour
so the dough does not stick to that
baking paper.
Lift them onto a baking tray
lined with baking paper and bake in the oven for approx 10-12mins or until
lightly browned.
Once they have cooled you can
then decorate.
Enjoy they will not last long.
