Gluten Free CakeTea Loaf
Ingredients: � 1 cup of strong black tea � 1 � cups Muffin Mix � � cup raisins or sultanas (optional) � � cup muscovado sugar � 1 tspn cinnamon , nutmeg and crushed cloves � 1 tspn Baking Powder (Gluten Free) � 60g Butter or � cup oil (Sunflower and Veg Oil do work better) Method: Add hot tea to raisins or sultanas and allow to cool. Cream butter or oil and sugar together. Sift and add dry ingredients. Add cooled tea and stir only until dry ingredients are moistened. Put into a small greased loaf pan and bake at 165oC for 30mins. TIP: Cool before slicing. This cake has a lovely flavour and was particularly nice with butter or with cream for dessert. Order our Muffin Mix Flour from our online store...
