Gluten Free Chocolate Crunch Slice Chocolate Crunch Slice (or Cheesecake Base)
Ingredients: 170g (1cup) Muffin Mix � � cup brown sugar � 1 cup Crushed Cornflakes or Phyllium Flakes � 1 cup Coconut � 125g Butter � 1-2 tablespoons cocoa � 1 tablespoon vanilla � 1 tablespoon coconut oil (optional) Method: Combine all dry ingredients together into a large bowl. Melt butter in the microwave for 40 seconds on high. Add butter, vanilla and oil to the dry ingredients mix until well combined Line a tin with baking paper. Spray with a non-stick spray. Press into a slice tin approx 28cm x 18cm. Bake at 160oC for approx 20 minutes. Ice in tin while still slightly warm and sprinkle with Nuts or coconut. Cut into serving sizes and freeze or store in an airtight container. TIP: This slice is great for the base of a cheesecake. Leave out cocoa for a plain base.
