Gluten Free Anzac Biscuits/Orange Anzac
Slice
1 1/2 cups of Bendy Bread Mix
1 cup brown sugar
100g butter
2-3 tblspns water
1
cup GF Oats or Freedom
Foods Rice Flakes with psyllium work well
1 cup
desiccated coconut
2 tblspns syrup
1/2 cup of sweet orange marmalade (slice
only)
Method:
Combine oats, sifted flour,sugar and
coconut in a large bowl:mix well.
Combine butter,syrup and water in a bowl and
microwave for 1 minute on high
or stir over a low heat on the stove
without boiling, until butter has melted.
Add syrup mixture to dry ingredients in a
bowl; mix well.
Roll the mixture into balls in your hands
and place on a pregreased baking tray.
If mixture is too dry (ie: When you try to
roll the mixture into balls it falls away) add more water by the tablespoon.
Bake biscuits in approx: 160oC for 12-15
minutes or until biscuits have browned.
Let biscuits cool on the tray to harden and
then transfer to cooling rack.

Free Chocolate Chips, Macadamia Nuts or Hazelnut meal (1/2 cup)
Slice Method:
Grease a rectangular 19cm x 29cm slice pan,
line base and sides with alfoil and spray with cooking spray.
Press 2/3 of above mixture over the base of
the prepared pan. Spread evenly with marmalade; crumble the remaining mixture
over the top.
Bake slice for about 20-25minutes. Cut the
slice into squires and let the slice cool in the tray.
