Gluten Free Berry Yummy Pikelets: Large and
Mini
Ingredients:
380g
Pikelet Mix or 1 cup to 3/4 cup water
1 egg (optional)
1 cup berries (this
can me a frozen mix like I used or fresh)
Extra
sugar (optional)
Yoghurt
or Cream
Berry
Juice or Lemon Butter
Method:
Mix Perfect pikelet mix as
per instructions. Gently stir in berries. Add additional sugar if needed.
Using a large
non-stick frying pan or skillet. Heat to a gentle medium temperature. Bake
your berry yummy pikelet to the size you would like. Large or mini
Once bubble appear on the
surface of the pikelets they are ready to turn.
Serving Suggestions: Prepare
each pikelet topped with lemon curd topped with cream. OR Serve as a
dip with yoghurt and dribble some berry juice for decoration. Then just dip
your pikelets into the yoghurt like a sauce. This was delicious if I do say so
myself mmmmmmmmmmmm....... I am going to try this with the next group of
children I have over.
