Gluten Free Cup Cakes
Ingredients:
2cups Muffin Mix
2 eggs
80g
Butter
½ cup sugar (optional)
1 tspn vanilla
essence
¾ cup milk or alternative

Method:
Separate eggs and beat egg
whites until they form soft peaks in a small bowl with an electric mixer at
high speed.
In another large bowl beat
butter slowly adding in the sugar. Beat until fluffy.

Beat in egg yolks and vanilla. Add flour
mixture, a third at a time, alternatively with the milk, beating just until
blended.

Fold in the beaten egg whites.

Prepare medium sized Cup Cake Paper Holders into
a 12 hole muffin tray, they will keep their shape better.
Bake in a moderately slow even 160oC for
15-20mins.
