This recipe especially for those who want something a little special for
Easter
1 1/2 cups of Pikelet Mix
1/3 cup of Sugar (optional - there is probably enough)
80g of butter
1 egg
1 cup of Gluten Free Choc Easter Eggs or (I used GF Carob)
1 cup Shredded Coconut
1 x 395g Condensed Milk to make the carmel topping
Method:
Preheat your oven to about 150 oC. Line a approx 3cm deep - 16.5cm x
26cm slab pan.
You can add all the following ingredients into a food processor if you
wish, I used my ever faithful mix master.
Add flour, sugar, butter and blend until resembles bread crumbs. Add
egg.
Process until the mixture all comes together. It should be fairly
stiff, not sloppy.
Spread using spatula into prepare tray. Slip into the oven for about
10-15 mins until just set on top.
Now take that out and top with the chocies , then coconut and pour the
can of condensed milk over the top.
Place that bake into the oven for about 20mins until lightly browned.
Leave to cool slightly and then cut.
Delicious! What a treat.
