Gluten Free Pineapple
& Coconut Friands
400g MuffinMix
1 Egg
100mls Pineapple Juice
150ml water
1 packet of coconut milk powder or about 4
tablespoons
1 tin of Pineapple, crushed or pieces
Sliced or flaked dried coconut
Method:
Blend together flour, water, pineapple
juice, egg and coconut milk powder.(You could substitute the water for
straight coconut milk)
Stir in pineapple to mixture until well
blended.
Pour into Friand or Muffin trays.
Top with the dried coconut.
Baking:
Bake in a slowly moderate oven approx
155oC for about 10-12minutes or until browned.
