The first time you make these mixes we
suggest for maximum results you should make the mixture according to the
recipe instructions. If the cooked product has browned on the inside this
means you will need to reduce your cooking time or your oven heat. They will
still taste great.
If you add extra wet mix (eg.banana or stewed
fruit) you will need to add about a handful of dry mix (ie. bran) or decrease
the amount of water or milk you add.
The Bread mix is the best of our range but it
can be the trickiest to achieve the desired results in YOUR oven. These
tips will help you to cook the perfect wheatfree loaf.
The higher the side of the tin the better
size slice of bread for a sandwich. (The Brighterlife Preferred Tin is approx
17.5cm long X 10cm high tin). Add any flavours you wish to give the loaf your
special touch. 2 tablespoon of oil and sea salt is my favourite.
Oven
Temperatures seem to vary greatly. Wheat free and Gluten Free Flours like
to baked slowly in a moderately hot environment.
Some tips here are to:
* Decrease oven heat by 10oC
from recommended cooking temperature, for fan forced ovens and
gas ovens by 15oC.
* Leave bread to cool before
cutting or refrig for 30 mins for the loaf to set then cut. Bread will keep
best stored in the fridge after 3 days. You should still be able to treat
yourself to a sandwich in three days.
You can freeze your muffins
to ensure you have a continuous fresh supply. Flavours limited only by your
imagination.
Pikelet mix can keep refrigerated for up to 5
days. Add a little more water and cook as you need. Pancakes are a terrific
lunch or breakfast, substitute them for bread and fill with your favourite
fillings.

Storage Information: All flour mixes
have a great shelf life because of the thick quality of the bags they are
packed in. Bags have a self zip lock and can be stored on your pantry shelf.
If you would like to increase the shelf life
store your flour in the fridge. You can use the flour straight from the fridge
successfully. All flour products are stored in a temperature controlled cold
room before being dispatched to customers. For bulk bags purchased the best
form of storage I find is the buckets pictured below. They are a decor brand
and it fits 5kg perfectly.

Oven Temperature Guide
All cooking times suggested in Brighterlife's
Kwik mix range are for use with electric oven. Some ovens do run hotter than
others, if you know your oven does run hot or experience a browning effect in
the mix, reduce your heat by 5oC.
